30 Nov Wild Tasty: Chocolate Pistachio Truffles
For the month of November I abstained from my red wine tipple and juiced everyday. However, I recently made the most delicious raw chocolate and pistachio truffles that just had to be enjoyed with a little sip of red wine. It is nearly December after all…

180g pitted medjool dates
90g roasted unsalted shelled pistachios
40g cocoa powder or raw cacao powder
30g raw almonds
1tsp vanilla extract
2tbsp orange juice
1tbsp orange zest
Pinch of sea salt
2tbsp roughly chopped/ground roasted unsalted shelled pistachios
Blend dates to a smooth paste in your food processor
Remove dates and process almonds and pistachios until you have a coarse powder
Blend everything together until it forms a ball. The dough should be firm and hold together well, just a little sticky but not wet.
Divide dough into 12 balls. Roll in your hands to create a smooth surface.
Roll each truffle in the ground pistachios and place in the fridge; best served at room temperature.
As you can see from the photo, I got more than 12 out of this recipe..
